Spinach and Turkey Tortilla Roll-ups
Ingredients:
- 2-10 inch whole grain tortillas (150g)
- ¼ cup cream cheese softened (70g)
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ⅛ teaspoon black pepper
- 1 cup cheddar cheese shredded (60g)
- 2 medium carrots grated (115g)
- 2 tablespoon plain yogurt (40g)
- 6 slices of deli turkey meat (106g)
- ½ cup spinach (20g)
Instructions:
- In a bowl, mix together the cream cheese, garlic powder, onion powder, black pepper, cheddar cheese, grated carrots, and yogurt until you get a smooth spread.
- Spread half of the cream cheese mixture onto each tortilla, leaving the edges clear.
- Add a layer of spinach and three slices of deli turkey on top.
- Roll up each tortilla tightly and cut into 6 slices.
Note: For best results, tightly wrap each rolled tortilla in plastic wrap and allow it to chill in the fridge for at least 1 hour before cutting and serving (this helps the cream cheese harden and keeps the roll ups together). However, this step is optional if you would prefer to eat right away.
